Rowan needed 48 covers, a fast counter and a room people would linger in. We kept the brick and the timber ceiling, put a long bar along the window with steel stools, and laid patterned cement tiles under the communal tables.
Acoustic panels hide above the beams, so the room stays lively without getting loud.
